Spices for biryami Steward's Lazzat
Recipe for 6 pers.
Ingredients :70 g of spices biryami Steward's Lazzat,1/2 kg chicken/meat/fish,cut into pieces,1 kg soaked,basmati rice,half cooked with a pinch of salt and drained,1 tbsp of garlic paste,1 tbsp of ginger paste,500 ml plain yoghurt,2 cinnamon sticks,5-6 whole cloves,3-4 cardamon pods,3-4 green chilli,1/2 cup crushed onions,1 1/2 cup fried onions,chopped coriander and mint leaves,1 kg potatoes,cut into cubes saked,with a pinch of yellow food colour,then half fried,1 cup of milk boiled with 1 g of zaffran,3tbsps of ghee,3 tbsps of oil,1 small cup of green peas.
1- Marinate chickend/meat/fish in half cup of milk,ginger and garlic paste,cinnamon,cardamon,cloces,spices biryani,crushed onions,green chilli,3/4 of the fried onions,coriander,mint,ghee,oil and yoghurt.Mixt altogether thoroughly.Addfried potatoes.Marinate for about 4 hrs in alarge pot.2-Layer with half of cooked rice on top of masala followed by green peas.Top the remaining rice,pour over the remaining milk,2 cups of water,a little ghee and rest of the fried onions.Cover with lid and cooked on low heat for about 1 hr.3-Remove the lid and use a spoon to check of the biryani is dried cooked.If not replace lid and allow to cook on low heat for another 10 mins 4-Serve with vegetable pickles,cucumber,carrot salad and spices sour milk.
